The Boulders Resort and Golden Door Spa, Arizona, in the luxury resort properties in the Waldorf Astoria portfolio, has the two splendid chefs responsible for the genius menu. Executive Chef Michel Pieton and Executive Sous Chef Gregory Wiener.

Pieton's love of food goes back to his early years on the family farm in Normandy, France. His mother's organic cooking was a great inspiration. He has his own organic garden to this day growing basil, thyme, chives and other herbs, plus radishes and heirloom carrots. A 23-year industry veteran, he is a graduate of Gerardmer in Vosges, France, where he earned a Certificat de Formation Professionnelle. Pieton began his culinary career at Hotel du Logis Neuf, France, as Commis de Cuisine. Later he became Chef de Partie at Le Negre Restaurant, France (three Michelin stars) and Restaurant Les Valois Sofitel Hotel ( one Michelin star). He worked the kitchens at the world class Ritz Carlton and Four Seasons Hotels. Pieton was Chef Saucier, Sous Chef, Banquet Chef, Chef de Cuisine and later Executive Chef at Chicago's Ritz and Executive Chef for Mandalay Four Seasons Hotel in Irving, Texas. Most recently, Pieton was the Executive Chef for the Four Seasons Hotel, Newport Beach, California, a post he held for 18 years. Under his skillful guidance, the restaurant earned several awards including the AAA Five Diamond award for excellence.

Pieton has built on his French culinary background to develop a distinctive style that he describes as a blend of Asian, Mexican, organic and California cuisine, using light and healthy ingredients. He has overseen The Boulders five dining outlets for the past four years. The Latilla, The Palo Verde, the Bakery Cafe, Rusty's and Bogey's at the Boulders Golf Club and the Golden Door Spa Cafe.

He loves the serene, peaceful atmosphere of The Boulders and the wild animals: wild pigs, quail, snakes and birds. Pieton has found a desert paradise.

Gregory Wiener is the resort's Executive Sous Chef. Wiener joined the Boulders, last year, from the Marriott Desert Springs, Palm Springs, California, where he was Chef de Cuisine for the fine dining Ristorante Tuscany, for five years. Earlier he was Chef de Partie for Aquavit, a restaurant in Minneapolis. Towards the beginning of his career, he was Executive Chef for Fanny Hill a well regarded Bed & Breakfast, in Wisconsin. Wiener's culinary skills have garnered him many awards including the National Date Competition in Palm Springs, the National Macaroni & Cheese Competition, and many others. He was born in Chippewa Falls, Wisconsin and is a graduate of the Culinary Institute of America in New York.

As the Executive Sous Wiener is in charge of all menu creations and creates Contemporary American Cuisine using fresh, organic ingredients grown on the property. He plans to continue offering an all-organic menu. “When I plate a dish, I want it to be striking. My inspiration is taking fresh ingredients and I want our guests to say 'wow' when their dish is presented, but also after they taste it.” says Wiener.
